Mexican Tacos for Cinco de Mayo

Celebrate Cinco de Mayo with this authentic Mexican taco recipe. It only takes 15 minutes to make, but it’ll look so good that your friends will think you’ve been slaving away in the kitchen.

INGREDIENTS
– 6 eggs
– 1/4 cup milk
– 1/2 teaspoon pepper
– 1/2 teaspoon salt
– 1 cup shredded Monterey Jack cheese
– 1 dash hot pepper sauce
– 1/2 cup salsa
– 6 oz chorizo sausage
– 8 (6 inch) corn tortillas

Crumble sausage in a skillet over medium to high heat. Cook and stir until evenly brown. Set aside.

Heat one skillet over medium heat, and heat another skillet over high heat. The skillet over high heat is for warming tortillas. Mix eggs, milk, salt and pepper in a medium bowl. Spray cooking spray in medium heat skillet. Pour egg mixture. Cook and stir until almost firm. Add sausage, and continue cooking and stirring until firm.

Meanwhile, warm tortillas for 45 seconds per side in the other skillet. The tortillas should be hot and crispy on the edges, yet pliable.

Sprinkle some shredded cheese over the tortillas while they are still hot. Top with some scrambled egg and sausage mixture. Finish off with hot pepper sauce and salsa.
