Mother’s Day brunch recipes

When we recommended the Twiztt by Joan Lunden cookware as a Valentine’s Day gift, we had no idea that this would become our go to set for all our culinary needs. Make it a double whammy and surprise mom on Mother’s Day with this new cookware and then make her these delicious dishes for brunch. Recipes provided by super-Mom Joan Lunden!

Garlic Prawn Bruschetta

Ingredients:
12 slices of crusty baguette
12 prawns, peeled and deveined
4 cloves garlic, finely chopped
1 lemon
Splash of white wine
1/3 cup 80ml olive oil
Small bunch parsley, finely chopped
Sea salt and cracked black pepper

Directions:
1. Mix half of the olive oil with the 2 crushed garlic cloves.
2. Brush the bread slices with the garlic olive oil on one side and place them in the grill pan, oiled side down.
3. Cook for 3 minutes.
4. Transfer to a large serving plate, grilled side up.
5. Grate the zest of the lemon and squeeze out the juice.
6. Grill the prawns for 2 minutes.
7. In a small saucepan, mix the rest of the olive oil with the chopped parsley, garlic, and lemon zest.
8. Add the wine and lemon juice.
9. Let simmer for 2 minutes and season to taste with salt and pepper.
10. Place 1 prawn on each slice of grilled bread and spoon the juices over.
11. Serve immediately.

Now it’s time for a little dessert!

Chocolate Mousse

Ingredients:
175g / 6oz. / 3/4 cup dark chocolate
1 egg yolk
4 egg whites
30g / 2tbsp fine sugar
White chocolate shavings
A few mint leaves

Directions:
1. Break the dark chocolate into small pieces and melt slowly on a very low heat in the saucepan.
2. Remove from the heat and whisk in the egg yolk.
3. Allow to cool.
4. In the large bowl, whisk the egg whites until they form soft peaks, adding the sugar little by little as you do so.
5. Carefully fold the egg whites into the melted chocolate.
6. Pour into 4 serving bowls and chill in the fridge for at least an hour.
7. Top with the white chocolate shavings and a mint leaf.
